The drip pan is a receptacle entirely made of AISI 304 food-safe stainless steel.
It should be placed under the skewer, parallel to it, and is ideal for collecting the fat juices dripping from the roasting meat, preventing it from soiling the top of the fireplace. In addition, the collected fat juice can be reused by collecting it from the bottom of the drip pan and brushing it onto the meat during cooking (with a spoon or a rosemary sprig). This procedure greatly gives flavour to the roasting food and helps keep it from drying out.
